If cooking is a daily routine, knowing how to cook is an art. Everybody knows this at “Pampanelle Inn”, Lucera’s restaurant that recovers and elaborates its tradition. The Inn’s reasons of pride are the meats, the cheese, the dairy products, the cold cuts and zero km vegetables seasoned with the precious extra virgin olive oil of this area; there are the sauces that free in the air a mixture of festive perfumes; there are the orecchiette made of burnt wheat, the lagane, the troccoli, the trofie and the tortelli homemade pasta prepared by mixing water with refined flour kneading with dexterity, like in the past. There aren’t enough words to describe our jam of onions and eggplants, of the preserved vegetables in olive oil, of the marmalade made with the oranges and lemons of the Gargano. All the rest is thanks to the cleverness and ability of lady Pina: with her in the kitchen, the country experience and the taste of the innovation cohabit in a harmonic embrace.
Past and present meet and they melt at the “Pampanelle Inn”, this special restaurant is just outside Lucera, in an angle of the Tavoliere drawn with the colors full of the South. Jean Brunhes, French geographer lived between the ‘800 and the ‘900, wrote that “while eating we incorporate the territory.” He was right. Try to sip a glass of wine produced from the grapes cultivated here only. Try to get lost in the reflexes of the color ruby of the Cacc'è Mitte, the DOC wine born with a curious name, descending from other black and strong wines that for a long time accompany pasta and meat dishes, they are still today strong dishes in our private kitchens as in the menus of this and any other restaurant in Lucera. You will feel the labor and the pride, the character and the tenacity of the past generations that have shaped this earth of beauties and contrasts.
